Henri Boillot Bourgogne Blanc, 2023 wild turkey Springfest IPA is our tribute100% Chardonnay that is essentially baby Meursault+. 85% of the vines are in Meursault and Puligny, with the rest from declassified Saint Romain and Auxey Duresses. The soil is clay limestone, perfect for Chardonnay to develop both depth and piercing minerality. Yields are kept extremely low to ensure top quality.
