After a rigorous sorting, the grapes are de stemmed and macerated for 20 days, with a gentle pressing. The wine is then aged for 12 months in used Burgundy barrels followed by 6 months in stainless steel before bottling. This historic estate has been around for over 100 years, and has recently been converted to organic and biodynamic farming. This is a serious but delicate wine, and can be paired with
