Contrada Palui Amarone della Valpolicella, 2019 Blaufrankisch and game meatsThis Amarone is made from 60% Corvina, 30% Corvinone, and 10% Rondinella, from vines grown on clay limestone soils rich in flint and black basalt. The grapes for Amarone are always dried for a few weeks before being vinified, and produce very concentrated flavors. The wine is fermented until it is dry, and the extra sugar from drying results in slightly elevated alcohol levels. Contrada Palui's expression is aged partly in large barrel and cement,
