Crafted from ancient, own rooted Merwah vines over 150 years old, this "Phoenix" rises with incredible structure and soul. Half of the fruit spends three weeks fermenting on its skins, providing a deep amber colour and a gutsy, tannic grip that perfectly balances the wine's natural fruitiness and vibrant acidity. The wine is naturally cold stabilised by
