Domaine Filliatreau 'Château Fouquet' Saumur Blanc, 2020 local brew Aged on lees in steelThis wine is made of 100% Chenin Blanc. We would pair this lean high acid wine with gnocchi and a creamy mushroom sauce. Chateau Fouquet is a separate property from Domaine Filliatreau and is both organic and biodynamic. The grapes are direct pressed then half the juice gets fermented and aged in old barrels while the other half is fermented and aged on the lees in stainless steel.
