While our standard edition of Calio is fermented with a rum yeast, this edition was fermented with a whiskey yeast. Then, we entered the distillate into a barrel that had been previously used to age whiskey and our barrel aged gin. The rum aged for over four years, and could therefore qualify to become a Bottled in Bond release. To qualify, the spirit must meet all of the relevant standards for
