Spontaneous fermentation with wild yeasts in stainless steel tanks. Slow and controlled cold fermentation helps to improve the texture and smoothness without working with lees, thus preserving freshness. The Riesling is gently clarified to obtain a clean, delicate wine that reflects its variety. The Macabeo, with a less demanding clarification process, enhances its weight and personality.
