Cesari Justo - 2019 (750ml) Hyogo salt-of-the-earth artisans—mixed with the spiritMade from a slightly unusual blend of 60% Corvina and 40% Merlot. The name Justo comes from a combination of the English word Just and the Italian word Giusto meaning Right. This wine is an appassimento style wine the grapes are dried for a short period of time about 20 days thereby creating a wine that is just right. Fermentation with skin contact occurs for 15 days before being racked into stainless steel tanks for full malolactic fermentation.
